The Auvergne knows five cheeses who are allowed to use the quality mark A.O.P. (Appellation d’Origine Protégée). This mark is only given to products of outstanding quality. Those cheeses are Cantal, Saint-Nectaire, Salers, Bleu d'Auvergne and Fourme d’Ambert.
